I would like to simplify the path to the gallery directories - omitting the subdirectory day and month, or allowing us to customize the path.

it's certainly not that important, but I prefer more control over where user data is stored and control over SEF.
Now the address might look like this:
https://www.domain.com/media/showtime/storage/2017/11/28/5/thumbnail/cat-and-dog.jpg?1519798173
Shorter user address:
https://www.domain.com/gallery/2017/5/thumbnail/cat-and-dog.jpg?1519798173
Just take it as a suggestion for thinking that does not need to be realized :-)

Developing Joomla extensions for years, the date pattern is the safest way to go, even for sites that have thousands of galleries and images.
We do know that shorter URLs are better but I don't think that there will be any SEO benefit here. If you use the right text in the alt attributes and SEO friendly filenames you should be fine. Short URLs are important for the URLs of your pages (have you tried Route 66 ?).
We will try to add an option for defining the storage path in the future.
